Salmone Genovese

Ingredients
  • Marinated salmon portion
  • 2 oz. Pesto sauce
  • 3 oz. grill vegetables

Procedures
  • Grill salmon until both sides are marked.
  • Place salmon in oven at 550 degrees, for 7 minutes.
  • Spread Pesto sauce on the plate and put the salmon on top.
  • Finish by putting the grill vegetables on top of the salmon.
Ingredients For Marinade (5 to 6 Portions)
  • 2 oz. chopped basil
  • 2 oz. chopped Italian parsley
  • 1 oz. chopped mints
  • 1 qt. olive oil
  • ½ cup balsamic vinegar
  • ½ cup lobster
  • 1 tbsp. kosher salt
  • ½ tbsp. black pepper

Procedures For Marinade
Mix everything together.
Ingredients For Pesto Sauce (16 Servings)
  • 22 oz. basil leaves
  • 3 tsp. salt
  • 8 oz. garlic cloves
  • 10 oz. pine nuts
  • 4 oz. grated parmesan cheese
  • 7 cups olive oil
  • ½ tsp. white pepper
  • 3 bunches Italian parsley

Procedures For Pesto Sauce
  • Put everything in a large bowl with 3 cups of olive oil.
  • Start blending, adding slowly the rest of the oil.
Ingredients for Grill Vegetable Medley (6 Servimgs)
  • 1 Lb. grill zucchini diced
  • 12 oz. roasted corn
  • 4 oz. diced red bell peppers
  • 1 oz. olive oil
  • 1 tsp. salt
  • ¼ tsp. pepper

Procedures For Grill Vegetable Medley
Mix all together.
