Salmone Genovese

Ingredients
- Marinated salmon portion
- 2 oz. Pesto sauce
- 3 oz. grill vegetables
Procedures
- Grill salmon until both sides are marked.
- Place salmon in oven at 550 degrees, for 7 minutes.
- Spread Pesto sauce on the plate and put the salmon on top.
- Finish by putting the grill vegetables on top of the salmon.
- 2 oz. chopped basil
- 2 oz. chopped Italian parsley
- 1 oz. chopped mints
- 1 qt. olive oil
- ½ cup balsamic vinegar
- ½ cup lobster
- 1 tbsp. kosher salt
- ½ tbsp. black pepper
Procedures For Marinade
Mix everything together.
Ingredients For Pesto Sauce (16 Servings)
- 22 oz. basil leaves
- 3 tsp. salt
- 8 oz. garlic cloves
- 10 oz. pine nuts
- 4 oz. grated parmesan cheese
- 7 cups olive oil
- ½ tsp. white pepper
- 3 bunches Italian parsley
Procedures For Pesto Sauce
- Put everything in a large bowl with 3 cups of olive oil.
- Start blending, adding slowly the rest of the oil.
- 1 Lb. grill zucchini diced
- 12 oz. roasted corn
- 4 oz. diced red bell peppers
- 1 oz. olive oil
- 1 tsp. salt
- ¼ tsp. pepper
Procedures For Grill Vegetable Medley
Mix all together.
