Ingredients
- 5 oz. sliced salmon
- 3 oz. spinach
- 1 oz. diced tomatoes
- 1 0z. sliced red onions
- 1 ½ oz. goat cheese
- 1 oz. toasted peanuts
- 2 oz. white balsamic vingrette
Procedures
- Season salmon with salt and pepper.
- Grill the salmon 3 minutes one side, 2 minutes the other side.
- In a mixing bowl add the spinach, tomatoes, and onions with the white balsamic vingrette and mix.
- Place on a plate, top with grill salmon, peanuts and goat cheese.
- 2 qt. olive oil
- 20 oz white Balsamic vinegar
- ½ cup sugar
- 1 tsp. salt
- ¼ tsp. white pepper
- 1 cup lemon juice

Whisk everything in a large bowl.
