Ingredients
  • 5 oz. sliced salmon
  • 3 oz. spinach
  • 1 oz. diced tomatoes
  • 1 0z. sliced red onions
  • 1 ½ oz. goat cheese
  • 1 oz. toasted peanuts
  • 2 oz. white balsamic vingrette

Procedures
  • Season salmon with salt and pepper.
  • Grill the salmon 3 minutes one side, 2 minutes the other side.
  • In a mixing bowl add the spinach, tomatoes, and onions with the white balsamic vingrette and mix.
  • Place on a plate, top with grill salmon, peanuts and goat cheese.
Ingredients for White Balsamic Vingrette ( 20 servings)
  • 2 qt. olive oil
  • 20 oz white Balsamic vinegar
  • ½ cup sugar
  • 1 tsp. salt
  • ¼ tsp. white pepper
  • 1 cup lemon juice

Procedures For White Balsamic Vingrette
Whisk everything in a large bowl.
