Salmon alla Griglia
(Grilled Salmon with a Grand Marnier Citrus Sauce)

2 (6 oz.) Skinless Boneless Camanchaca® or Pier 33 Salmon® portions
2 oz. Grand Marnier liqueur
Juice from ½ lemon
Juice from ½ lime
Juice from ½ orange or tangerine
1 tbs. butter
1 tsp. roasted pine nuts
4 large basil leaves (julienne cut)
1 pineapple slice
Salt and pepper to taste
Grill or sauté the salmon, which has been previously seasoned with salt and pepper to taste, until fully cooked. Also grill the pineapple at this time. In a hot sauté pan, add the butter and Grand Marnier. Let evaporate. Add the citrus juices, the pine nuts and the basil to the sauce, and allow it to reduce for approximately four minutes.
For serving, place the grilled pineapple on a plate and lay the salmon fillet on top of it. Pour the sauce of the salmon and serve hot with you choice of seasonal vegetables and potatoes.
