Broiled Honey Salmon

Makes 4 Servings

4 (6 oz.) Skinless Boneless Camanchaca® or Pier 33 Salmon® portions
3 oz. Sake
1 oz. Soya Sauce
1 tbs. fresh ginger, julienne
Cracked pepper to taste
Honey to taste
Lemon or lime (optional)

Place Sake, Soya Sauce, ginger and cracked pepper in a shallow casserole dish. Pierce the salmon portions with a fork (to help absorb the marinade) and place them into the dish; if you have time let marinade in refrigerator for 1 hour, turning after 30 minutes, if in a hurry place directly in oven.

Baste with marinade, drizzle salmon generously with honey. Set oven at Broil and place casserole dish on top rack. Watch closely until salmon begins to brown, approximately 3-5 minutes. Remove from oven, turn the salmon, baste with sauce and generously drizzle salmon again with honey.
Continue broiling for 3-5 minutes or until brown. Remove from oven and serve with your favorite vegetables or rice. Squeezing a lemon or lime onto the salmon is optional.
